How to make your own Pumpkin Spice Latté! *Fall Series*

I felt it was time to share the recipe on my favorite Fall drink!
As some of you already know I haven't been able to get my hands on any Pumpkin Spice Syrups yet, so I will be using Vanilla Syrup. I still have the pumpkin spice and pumpkin spice coffee creamer so there will be plenty pumpkin spice flavor to it!

There's many years since I had PSL on Starbucks for the first time and that was not in Norway as Starbucks just recently opened their first store here.
I was of course obsessed with getting PSL during Fall and I got a little disappointed when I tasted it again - it didn't really taste much?
I've had it several times here in Norway and every time it is the same - the milk is too warm and there's almost NO pumpkin spice flavor to it... All you can taste is warm milk with a liiiitle hint of something cinnamony..
I just wonder, is it like that in the US as well? Or UK? Or wherever really? Somebody please tell me because I can't remember it being so flavor less to be honest!

My PSL is a flavor bomb and it is sooo good for those chilly and rainy days!

You can even add some chili paste if you want it hotter and more spicy!

YOU WILL NEED:


  1. Coffee! You can brew your own, you can use espresso, use whatever you like! I went with the easy version of 2x espresso in my Dolce Gusto machine ;)
  2. I then use Starbucks Vanilla syrup, Pumpkin Spice & Coffee Mate Pumpkin Spice Coffee Creamer (you can leave this one out, I just like the taste).
  3. Milk! Frothed:) I put some milk in a glass and I blast it in the microwave for a few seconds! I'd rather have it too cold than too warm as I don't like the taste of over heated milk;)

    HOW TO:
  4. Brew your coffee!
  5. Watch it and smell the deliciousness....
  6. Now you should have something like this!
  7. Add you coffee creamer
  8. Add as many teaspoons of vanilla (or pumpkin spice) syrup as you like!
  9. Add Pumpkin Spice. I usually go with 1-2-3 teaspoons.. Depends!
Give everything a good stir and then add your milk and the froth at the end!
And last but not least, if you prefer, some whipped cream on top!
Sugar to taste.
Drizzle over some pumpkin spice to make it look nice :)

I baked two cakes today and asked my grandfather if he wanted to come over for coffee and cake :)

Before he arrived I went to have a coffee with some friends.
I absolutely love my new Body Shop Color Crush lipstick!



This cake is just insane if I may say so myself.
It is also suuuuper easy to make! I don´t know if the picture makes it look that delicate, but trust me. It is soooo good :)



Apple Cake Recipe:

3 eggs.
135 grams sugar.
190 grams flour.
3 teaspoons baking soda.
3 teaspoons vanilla sugar.
1/2 box (about 250grams) of vanilla pastry cream.
2 desilitre créme fraiche.
As many apples as you want!

  1. Mix eggs and sugar for about 8 minutes until fluffy.
  2. Mix flour, vanilla sugar and baking soda - then add little by little into eggs/sugar.
  3. Mix this together.
  4. Add crème fraiche and vanilla pastry cream.
  5. Blend until everything is smooth and even.


I usually then layer the cake "dough" and the apples. I start with the cake and then a layer of apples. 

I then sprinkle (a lot) of cinnamon and sugar on top and then another layer of cake and apples.
Finish with cinnamon and sugar.



Middle section in oven 180 degrees for about 60-70 minutes.

It´s supposed to be a little "sticky".


When finished I find it the best to leave it for a while to cool down and let the cake "set".
It´s even better the next day!

Greek Frappe Recipe

One of my favorite things about Greece is the coffee. Ice coffee. Frappe.. Cappuccino Freddo.. But that´s another story, let me show you how to make a Frappe first :)

It´s  ridiculously simple, and it´s really just water and instant coffee!
Who would have thought I would love instant coffee like that...
The instant coffee that are used is the Nescafe Classic, it looks like this:



This is actually bought in Greece, we had to buy something because the coffeemaker in our apartment didn´t work. I thought it was the same as I get at home, I just thought the design was slightly different because of the "Frappe" picture on it. That´s really a Greek thing. But no, this is not available in Norway, and I read somewhere that it´s not in the UK either?
Anyway, we have the Nescafe Original - it´s the same red cup on the picture. I don´t know if it´s the same? I tasted it the other day and I felt it tasted different..
Well, I still have something left in this can so I´m just gonna enjoy it as long as it lasts ;-)
....Ehm, I guess my point was supposed to be that you can use the Nescafe Original - if the Classic is not available where you live;)

OK, over to the recipe! It super simple and soooo good :)


YOU WILL NEED:

- 1 - 1.1/2 teaspoons Nescafe Classic.
- 1 - 2 (depends on how sweet you prefer your frappe) teaspoons sugar.
- 3 icecubes. 
- Cold water to fill your tall glass.
- Some milk if you like.
- Milk frother.

If you don´t have a milk frother, you can use a mix master. In Greece they have a own frappe mixer.
I bought this frother at IKEA and it´s was like $2 // under £2. It´s not the best quality either though, but it works just fine:)




(1.) Start by putting your Nescafe and sugar in a tall glass.
(2.) Add very little water, only 1 - 1.1/2 teaspoons.

In Norway we use regular tap water, so I keep a bottle in the fridge so it´s always nice and cool:)

1. Start frothing until it´s solid, you can do a test by tilting the glass upside down, the froth shall not drip.
2. Add your ice, I feel 3 ice cubes is enough. You wouldn´t want it to water out your coffee!
3. Add more water, now you´re gonna fill your glass up. Stir while doing it.
4. It is not necessary, but you can add some milk if you want:) Gives it a rounder taste. But it´s just as nice without the milk!



And there you have a delicious Frappe perfect for hot summer days, or nights, or whenever you like! But it´s not a secret that it´s extremely perfect at the beach ;-)
